Ingredients:
1 Mandarin Fish (about 2 lbs.)
1 slice Ginger
1 small stalk Chinese onion
1 large clove Garlic
6 Mushrooms (soaked)
½ Bamboo shoot (sliced)
1/3 cup lard
7 tsps. Soya sauce
1 teaspoonful Salt
2 tsps. Wine
¼ lb. fat Pork (cut in squares)
1 cup Meat stock
½ teaspoonful Sugar
1 piece Star aniseed
Method:
Heat the lard in a frying-pan, and sauté the fish, which has been previously scored, for 5 minutes until it is brown on both sides. Add in the ginger, onion, garlic, mushrooms, bamboo shoot, soya sauce, salt, wine, fat pork, and meat stock. Cook for a while, finally add the sugar and aniseed. Bring to the boil, then simmer for half an hour with a cover on the frying-pan. Serve the fish whole.
